The Castelluccio Lentil is an IGP (Protected Geographical Indication) product and represents one of the excellences of Italian Gastronomical Heritage.
It is very small and colour varies from one lentil to another (yellowy, brown, striped). It has a particularly fine skin and therefore does not require soaking. It is rich in protein and can be coupled well with cereals (bread, pasta).
Traditionally this legume is enjoyed as a soup, preferably cooked in an earthenware pot.
