It is a cheese made exclusively from local sheep’s milk and matured for about 1 month.
The Pecorino Fresco has a straw-yellow semi-hard rind, with a compact but smooth texture and is white in colour. It has small eyes. This pecorino, expresses all of the sweetness and delicacy of the milk.
